This is a kitchen knife that we have arrived at in our quest for the ultimate in sharpness and ease of use. This work was completed after 5 years of trial and error using traditional Japanese white steel. The "Kuro-uchi" technique, which is unique to Japan, is used to express traditional Japanese kitchen knives. This santoku kitchen knife is thoroughly focused on sharpness.

KATEN 
This knife was created with the aim of achieving a size that is very popular overseas. The overall balance of the size is very difficult to achieve, but through trial and error, we have arrived at this design. Once you hold it in your hand, you will be amazed at its weight and sharpness. The "Kuro-uchi" technique, which is unique to Japan, is used to express traditional Japanese kitchen knives. This is a Gyuto (beef knife) that is particular about its massive feeling.
